Ideal for full-bodies red wines. It brings out the aromas of red and dark skinned fruit.
The high quantity of polysaccharides released during fermentation adds to the softness and stability of the colour.
Result is a fresh, intense and well balanced wine with a long finish. Suitable for fermentations in difficult conditions and at high alcohol contents (up to 17% v/v).
Excellent for Appassimento/Ripasso style wines.
